There are plenty of recipes out there that are easy to create. From sandwiches to quesadillas, you can spice up your everyday lunch with these recipes. Spicy Grilled Cheese Sandwich

This isn’t your typical grilled cheese. This recipe from Allrecipes kicks it up a notch! All you need:

  • 1 tablespoon of butter
  • 2 slices of your choice of bread
  • 1 slice of American or cheddar cheese
  • half a tomato, thinly sliced
  • 1/8 of a small onion, chopped
  • 1/2 of a jalapeno, chopped

Heat a large enough skillet on low heat. Butter one side of each slice of bread. Add one slice of bread, butter side down, to the skillet. Lay the slice of cheese, tomatoes, onions, and jalapenos on top of the bread. Top with the remaining slice of bread, butter side up. Once the bottom of the sandwich has toasted, flip and continue frying until brown to your liking.

Spicy Chicken Ranch Quesadilla

This is an easy lunch recipe from Kitchen @ Hoskins that you can even meal prep! Here’s what you need:

Mix chopped spicy Mexican chicken, shredded cheddar and pepper jack cheese, and ranch dressing into a bowl. Heat a large greased skillet on low. Spread chicken evenly on a tortilla and add to the skillet. Top with a second tortilla. Cook on both sides until golden brown.

Spicy Chorizo Pockets

A delicious recipe from Food Network to try at home. Chorizo is a spicy sausage packed with flavor. Ingredients include:

  • 2 teaspoons of vegetable oil, plus a little more for brushing
  • 6 ounces of crumbled chorizo
  • 1/2 teaspoon of ground cumin
  • 1/4 cup of fresh or frozen corn kernels
  • 2 tablespoons of chopped pickled jalapenos
  • 3/4 cup of grated Monterey jack cheese
  • 2 scallions, chopped
  • all-purpose flour, for dusting
  • 1 11-ounce tube of refrigerated French bread dough
  • 1 large egg

Heat the vegetable oil in a skillet. Add the chorizo and ground cumin and cook until browned. Add the corn and jalapenos and stir until the corn is tender. Let this mixture cool completely. Mix in the cheese and scallions. Squeeze the mixture together with your hands to make it compact. Preheat your oven to 425 degrees F and brush a baking sheet with vegetable oil. Roll out the french bread dough and create the pockets with the chorizo mixture. Brush each pocket with an egg wash and bake until golden brown.
